Alfredo Sauce:
1/2 lb. sweet or salted butter
12 oz. heavy cream
Fresh ground white pepper
1 1/2 cups fresh Parmesan, grated
Ricotta Cheese Mix:
1 pint Ricotta cheese
2 oz. Romano, grated
3 oz. Mozzarella, shredded
2 tbls. green onions, sliced
2 teas. fresh parsley, chopped
1/2 teas. salt
1/8 teas. black pepper
1/4 teas. dried basil
1/4 teas. dried oregano
1 1/4 cups Alfredo sauce, cooled
Vegetable Mix:
4 cups broccoli florets
2 cups carrots, sliced 1/4″
4 cups fresh mushrooms, sliced 1/4″
2 cups red bell peppers, diced
1 cup green bell pepper, diced 1 cup yellow onion, diced
2 cups zucchini, sliced
Lasagna noodles
18 slices Mozzarella cheese, 1/2 oz. each
Lay out enough dry lasagna strips in a 9×13 pan to ensure you have enough to make 3 full layers, with very tiny overlap on apiece layer. Remove the dry strips and cook according to package instructions until barely “al dente” and drain.
ALFREDO SAUCE: Heat water to a boil in the bottom of a double boiler. Add butter, cream and pepper to the top pot and heat until butter is absolutely melted, then stir in Parmesan until melted and blended.
Remove top pot and set aside to cool. Divide the Olive Garden Lasagna 307 sauce into 2 equal portions. Refrigerate 1 portion for use later.
RICOTTA CHEESE MIX: Combine all ingredients in a bowl and blend thoroughly with a rubber spatula. Set aside at room temp.
VEGETABLES: Combine all veggies and mix well.
ASSEMBLY: Coat the bottom and sides of a 9×13 baking dish with vegetable spray. Lay out cooked lasagna strips (about 4) to cover entire bottom. Spread 1-1/4 c of the Ricotta mix evenly over the strips. Top with 8 c of veggie mix and spread out evenly. Lay out 9 of the mozzarella slices to cover the veggie layer. Repeat this layering. Top the second layer of mozzarella slices with lasagna strips and spread them evenly with 1-1/4 c ricotta cheese mix to finish.
COOKING: Spray a sheet of foil with vegetable spray and cover the baking dish tightly with the foil, sprayed side down. Bake in a preheated 375F oven for about an hour or until the internal temp is 165F. Remove from the oven and grant to sit for a few minutes, covered, before slicing and serving. Immediately prior to serving, heat the reserved portion of Alfredo Sauce and take the hot sauce over apiece slice of lasagna as it is served.
–Olive Garden Pasta Frittata–
12 Ounce spaghetti, cooked, cut into 2″ pieces
3 Ounce green onions, sliced
3 Ounce thick bacon, cooked and chopped
vegetable spray or margarine
3 tblsp Fontina, shredded, heaping
Parmesan, grated
3 3/4 cup
FRITTATA BATTER: 6 Medium eggs
2 1/2 cups Half and half
5 Teaspoon cornstarch
1 dash nutmeg
Preheat oven to 350F.
FRITTATA BATTER: Beat eggs, half and half, cornstarch, salt and nutmeg thoroughly until all ingredients are absolutely blended. Blend the 2″ spaghetti pieces, green onion rings and bacon pieces in a bowl until evenly mixed.
Coat a 1-1/2 qt round baking dish, including walls, with spray or margarine. Empty the spaghetti mixture into the baking dish and spread evenly. Add the frittata batter to cover the filling mix.
Bake in a 350~ oven for about 25 minutes until center is set. When center is set, cover the frittata evenly with the Fontina and bake until cheese is golden. Turn off the heat and open oven door. Let the frittata set in the open oven for 15 minutes for the batter to set more firmly and make removing from the dish easy. Before serving, sprinkle with Parmesan and cut into 4 wedges.
–Olive Garden Shrimp Primavera–
SAUCE:
6 tbsp. butter or margarine
1 tbsp. garlic, fresh, minced
1 oz. package Knorr Newburg Sauce Mix (or similar)
32 oz. crushed tomatoes, canned
1-1/2 tbsp. lemon juice, fresh
1/4 tsp. (or to taste) red pepper, crushed
1/2 tsp. basil, dry
1/4 tsp. marjoram, dry
1/2 tsp. black pepper
VEGETABLES:
1/2 lb. mushrooms, halved (or quartered if large)
1 cup green bell peppers, cut into 1″ squares
1 cup red bell peppers, cut into 1″ squares
1/2 cup yellow onion, cut into 1″ squares
2 Tbsp. butter for sauting
PASTA:
1 lb. fresh Olive Garden Linguine (or calibre dry pasta)
SHRIMP:
1 lb. medium to massive fully cooked shrimp, thawed and drained Melt butter in 3-quart saucepan over medium heat. Add garlic and cook one minute. Add remaining spice and tomato ingredients, stir well and simmer for 10 minutes.
Meanwhile, in a massive saute pan, melt 2 tbsp. butter. Saute vegetables about 3 minutes until crisp – tender. Add to the sauce and simmer 5 minutes more.
Cook pasta according to directions. When pasta is nearly done, stir shrimp into sauce to heat through. Do not boil. Spoon Primavera over hot linguine. Pass Parmesan cheese.
–Olive Garden Capellini Pomodoro–
3 cloves Garlic, mince
2 pounds Plum tomatoes; seeded, diced
1 ounce Fresh basil leaves, minced
1/3 cup Extra virgin olive oil
3 ounces Parmesan cheese
12 ounces Dry angel hair pasta, cooked
1/4 teaspoon Pepper
Heat olive oil and add garlic; cook until it turns white. Add tomatoes and pepper and heat through, stirring constantly, about 2 to 3 minutes. Tomatoes should not lose their shape.
Remove from heat. Transfer hot, cooked pasta to massive bowl. Toss pasta gently with tomato mixture, basil and half of Parmesan cheese.
Serve immediately and pass remaining Parmesan.
–Olive Garden Fettucine Alfredo–
8 ounces Cream cheese — cut in bits
3/4 cup Parmesan cheese — grated
1/2 cup Butter or margarine
1/2 cup Milk
8 ounces Fettuccine; cook — drain
In massive saucepan combine cream cheese, Parmesan, butter and milk, stirring constantly until smooth. Toss pasta lightly with sauce, coating well. Leftovers freeze well.
–Olive Garden Home Dressing–
8 ounces Paul Newman’s Vinegar and Oil Dressing
1 clove garlic, peeled and minced
1/2 teaspoon Dried basil 1/2 teaspoon Dried oregano
3 packages Sweet and Low — or 1 containerful Sugar
Put ingredients into the bottle of dressing and shake well. Refrigerate 24 hours before using.
–Olive Garden Tiramisu Dessert–
1 Sponge cake, (10 to 12 inch about 3″ tall)
3 ounces Strong black coffee, or instant espresso
3 ounces Brandy or rum
1-1/2 pounds Cream cheese or mascarpone, room temperature
1-1/2 cups Superfine/powdered sugar
Unsweetened cocoa powder
Cut crossways middle of sponge block forming two layers, apiece about 1 1/2 inches high.
Blend coffee and brandy. Sprinkle enough of mixture over bottom half of block to flavor it strongly. Don’t moisten block too much or it might collapse on serving.
Beat room-temperature cheese and 1 cup sugar until sugar is absolutely dissolved and cheese is light and spreadable. Test for sweetness during beating, adding more sugar if needed.
Spread cut surface of bottom layer with half of the cheese mixture. Replace second layer and top this with remaining cheese mixture. Sprinkle top liberally with sifted cocoa.
Refrigerate block for at least 2 hours before slicing and serving.

Hello my Divanites! The Louisville Dining Diva has been reflecting (yes, I’m gonna go all Philosophical on ya) on the American dining experience. I’ve noticed something about our new Millennium. Our schedules are so overwhelming; we’ve forgotten how to take time to delight the easy pleasures.
Remember when having dinner was a time to slow down, reconnect with your family and friends, and have a scrumptious, homemade meal? Remember when intake out at a Louisville Restaurant meant it was a special occasion? Remember when restaurants focused on the calibre of the food, atmosphere, and creating a dining experience rather than “turning tables”?
A restaurant chain is a restaurant chain. The food is the same as any other you can get from the same genre of cuisine at any other chain eatery. There’s nothing one-of-a-kind in the experience, but it’s fast, usually hot, and satisfies your hunger.
Now, I’m not saying there is anything wrong with Restaurant chains. What I AM sayin’… and HEAR me on this… is that we’ve become a society so conditioned to what’s familiar or branded that we’ve forgotten the very reason we go out to eat.
“So Diva,” you ask. “What’s the solution to this problem plaguing the Louisville Dining Community?”
My very stern “mom” look that you can’t see in this blog is locking eyes with yours and proudly proclaiming, “Seek out the restaurants in town that offer something DIFFERENT.”
”But where do we start?” you ask.
Hmmmmm…. Let’s begin with Vincenzo’s! This Louisville picture has been around forever and built a reputation for upscale dining. It’s the kind of place you take your ideal girl, prom date, or theatre dinner partner to enjoy a meal the way it was intended.
And if a certain someone was thinking of “popping the question”, Vincenzo’s would be one of the top suggestions in my book. The recently tweaked luminous décor, high-ceilings, and Renaissance style paintings perfectly set the stage for your special event after the sun goes down. Want a tiny more romance? Try their courtyard area complete with mature trees, umbrella’d tables, and twinkling lights to add that extra sparkle to your evening.
Dining at Vincenzo’s is like a pleasant waltz in the Garden of Eden. Take my advice and order either their new Three Course Theatre Menu or a Fabulous 6 course Champagne Dinner and treat yourself to a Lemoncello Martini. Chef Agostino HAND MAKES the Lemoncello for this cocktail and it is nothing short of Zen in a glass.
Our gracious host, Chef Agostino stopped at our plateau and shared one of his young scholar stories with us. Don’t let his calm demeanor and friendly smile fool you, in his younger days he was quite the cheeky tiny devil. As a young chef novice at Le Caprise in Palermo, he was constantly looking to learn more and improve his craft. But Head Chef’s back in the day were very secretive. Our young Agostino asks his teacher, “Chef, how many eggs did you use to make the mayonnaise?”
The Chef, fearing to lose his job if this gifted usurper learned the secret to his special mayonnaise replied, “It is not your time to know.”
Agostino, being 16, impetuous, and with a curiosity to rival any cat, waited until the Chef was finished, then immediately took the trash out… like a good novice should. While outside, he counted apiece and each egg shell. Sneaky, sneaky, young Agostino! To this day, he never revealed to the chef that he learned his recipe secrets by perceptive the ingredient scraps. But what that experience taught him was to be on your toes, take each opportunity you’re offered, and don’t be afraid to pass on your knowledge. In his kitchen, Chef Agostino instructs everyone… even YOU if you are NOT so inclined.
After our Lemoncello Martini’s, my dining companion and I splurged on the Champagne Dinner. A variety of Antipasti, or Antipasti Imperial, as Vincenzo’s would call it, tickled our taste buds.
Appetites sufficiently peaked, the Rissottino arrived topped with Eggplant and teaming with fresh mushroom, tomato marinara boasting a slightly spicy goodness with a schmear of fresh basil pesto. As Rachel Ray says, “YUMMO!”
Ahhhh, fish. Delicious and Nutritious. Tonight was no exception. Chef Agostino entranced us with BRANZINO AL POMODORO, or fresh Chilean Sea Bass over a grilled Beefsteak Tomato slice, sweet Bell Peppers, Caper sprinklings, a Jumbo Prawn, and a couplet of Asparagus spears.
As some of you know, Diva isn’t from Louisville. I spent a good good deal of my life living on the Eastern Coast. My father, an avid fisherman, would canvass into the Gulf Stream quite often and bring home dinner straight from the sea. So I have tendency to be tough on restaurants that serve fish. Vincenzo’s passes the Diva test for fish with FLYING colors! Not only was my fish fresh from the sea, but the flavor combination Chef Agostino used STILL has my taste buds screaming for more!
Our between course intermezzo was a lemon sorbet to sanitize the palate and prepare us for the delights ahead. There is something about being served something as easy as a lemon sorbet lovingly topped with fresh mint in a martini glass. Try it sometime fellas… you’ll be glad you did.
Next up, we sampled the INVOLTINI DI VITELLO SINATRA aka their famous Veal Sinatra, accompanied with Peruvian fingerling potatoes and the most tender and flavorful Lamb Chop I’ve had the pleasure of devouring. But then, came DESSERT! My favorite part of the meal. At times, I wish I socialized with my Red Hat friends more often so I could take dessert first and state it was a rule.
Chef Agostino bestowed us with a medley of Tiramisu, Georgia Peach Cheesecake topped with Carmel Sauce, a mini Cannolli, and fresh fruit with Chantilly cream. Vincenzo’s uses Sponge block instead of Lady Fingers in their Tiramisu giving it a lighter flavor than what you might have had before. And the Chantilly Cream? OMG! Chef Agostino uses just a touch of Mascarpone cheese to make it light and fluffy. Trust me, Divanites, it was REALLY DIFFICULT to not lick the plate after this offering.
During our meal, I had the pleasure of interviewing a couple visiting from Arizona and Alabama. Patty and Johnny came to Vincenzo’s on the suggestion of the concierge at Marriott. Having a discriminating pallet for Italian food, Johnny ordered a easy Pasta with Tomato Sauce and Basil because, “If they can do that really well, you know you’ve found the ideal trusty Italian restaurant in Louisville.” The outcome? “It was the most astonishing sauce I’ve ever tasted,” he boasted.
The staff doesn’t care that you stick around for a while. That is what the dining experience is all about, my friends. Good drink, good food, good friends, and feeling like you’ve been a part of an event for the evening. Even if the event is just to celebrate Friday.
Chef Agostino and Christopher Sollner (Catering Director Extraordinaire), I hope you enjoyed my review, as much as I enjoyed spending my evening with you and your staff at Vincenzo’s.

Top 5 Family Fun Beaches
Planning a pass with the whole family means you have one primary consideration: keeping the children happy. If planning a beach vacation, it seems you already have taken care of that main consideration, but not completely. You want to be sure you select a kid-friendly beach that will also keep the adults happy.
Dr. Beach, otherwise known as scientist Dr. Stephen Leatherman, chooses the top beaches apiece year, always with an eye toward the children as well. All of the following selections are prefabricated with the family in mind. These were Dr. Beach’s selections for 2006.
1. Fleming Beach, Maui. This beach, of which part is the Ritz Carlton beach, is a favourite destination for families. Here, you can surf, swim and picnic. Since the children are with you, you’ll appreciate that there are restrooms, showers and picnic facilities. If you’re visiting in the winter, stay out of the water, as the surf is dangerously high then. Families also like the location – it’s on the west side of Maui and is backed by a forest of trees which wage abundant shade.
2. Caladesi Island Say Park, Florida. This beach makes a wonderful complement to a Florida pass with kids. Head to Florida’s west coast (this beach is near the St. Petersburg/Clearwater area) and visit this park, which offers a marina, picnic pavilions, shelling and fishing, as well as nature studies. There are also three miles of nature trail here. The beach is a family favorite due to the myriad of activities that complement your visit, as well as the beautiful sand beaches perfect for sandcastle making.
3. Ocracoke Island, North Carolina. Located on North Carolina’s Outer Banks, Ocracoke Island is a favourite destination for families. There’s something here for everyone: the children enjoy watching the “banker ponies”, the wild ponies that live there, and parents enjoy the quaint shops, historic lighthouse, and darling homes. The village of Ocracoke is on the National Register of Historic Places. There’s a free ferry service from Hatteras Island to Ocracoke Island. It’s a 40-minute ferry ride that can end up taking a lot longer in the summertime, as the move for the ferry can be a long one.
4. Cooper’s Beach, Southampton, New York. Southampton was the first settlement in New York State, in 1640, and this beach is the main beach in the Southampton area. Of course, Southampton is known as the playground of the rich during the summer months, so be sure to prepare yourself for that if you’re not normally part of that moneyed crowd. But don’t let that scare you off – the beach is also a favorite playground of children everywhere. You should carry some cash: non-residents pay $25 for weekday parking and $30 for weekend.
5. Hanalei Bay, Kauai, Hawaii. This beach, located on the north coast of Hawaii, is a quiet shelter of fun beach activities. There are many pass home rentals in the area, so you can head from your condo or home rental right to this beautiful beach. Children love it because the white sand beaches are prime for sand play, there are restrooms, picnic facilities and a lifeguard on duty. Children can play in the water most times of the year and surfing and boogie boarding are also favourite here.
